Whiskies of Kattilalaakso

All whiskies of Kattilalaakso Distillery are made of Finnish heritage cereals. Old cereal varieties have longer stalks and smaller grain than modern varieties. Long stalk means also deeper roots and the heritage grains can better utilize the nutrients and water on the field.

Small grain has more surface area with taste and nutrients but less starch. That is why heritage cereals have more taste, but yield is smaller.

Using heritage grain we support those open-minded farmers who have revived heritage grain cultivation despite smaller yields.

Kattila Whisky L1 (available 2028)

First lot of Kattila Whisky will be made of Jorma heritage barley from Makkola organic farm in Kitee. Some notes of the history of Jorma barley:

In 1970’s Jorma Simola,  head of the agricultural department of Toukolan Osuusliike got 12 kg hulles barley. He recognized the value of this grain variety and started to develop it for commercial use. This hulless barley variety was named after him as Jorma barley.

Jorma barley has an outer hull that is much less tightly attached and therefore drops off on its own as it is harvested in the field. This kind of cereal has been grown in Finland for hundreds or even thousand years. Based on the grain samples, Jorma barley has been traced as an old barley variety in Rautalammi, Northern Savonia from the 16th century.
